Enhance pecan bread with flavorful applesauce for a moist and delicious breakfast or snack.
Ingredients:
  • 0.66666668653488 cup pecans
  • 2 cups all-purpose flour
  • 1.3333333730698 cups packed brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon nutmeg
  • 0.5 teaspoon salt
  • 1 cup applesauce
  • 0.25 cup vegetable oil
  • 1.5 tablespoons cider vinegar
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C) and generously grease a 9x5-inch loaf pan.
  • Arrange pecans in a single layer on a baking sheet.
  • Roast pecans in the preheated oven until beautifully golden, for about 5 to 7 minutes. Take pecans out of the oven and lower the oven temperature to 350 degrees F (175 degrees C).
  • In a large bowl, combine flour, brown sugar, cinnamon, baking soda, baking powder, nutmeg, and salt. In a separate bowl, mix together applesauce, water, vegetable oil, and vinegar. Gently combine the applesauce mixture with the flour mixture until just mixed, then fold in the pecans. Transfer the batter into the loaf pan and bake as directed.
  • Bake in the preheated oven for 50 to 60 minutes or until a toothpick inserted in the center comes out clean. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
