Healthy and delicious bran muffins with a chocolate and spice twist.
Ingredients:
  • 1 cup milk
  • 1 teaspoon lemon juice
  • 1.5 cups bran cereal (such as Kellogg's® All-Bran®)
  • 1 cup all-purpose flour
  • 2 teaspoons cocoa powder
  • 0.5 teaspoon salt
  • 0.125 teaspoon ground cinnamon
  • 0.125 teaspoon ground cloves
  • 0.66666668653488 cup dark brown sugar
  • 0.33333334326744 cup vegetable oil
  • 0.5 teaspoon vanilla extract
  • 0.75 cup raisins
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C) and prepare a muffin tin by greasing the cups or lining them with paper liners.
  • Combine milk and lemon juice in a bowl and allow it to curdle for 5 minutes. Add bran cereal to the mixture and let it soften for an additional 5 minutes.
  • Combine the flour, cocoa powder, baking soda, baking powder, salt, cinnamon, and cloves by sifting them together in a bowl. In a separate bowl, mix the brown sugar, vegetable oil, egg, and vanilla extract until well combined. Gently fold the egg mixture into the flour mixture until just combined to create the batter.
  • Mix the bran cereal into the batter and gently incorporate the raisins. Spoon the mixture into the muffin cups that have been prepared.
  • Bake in the oven until golden brown and cooked through, about 16-18 minutes.
