Quick, delicious salmon dish versatile for any meal - with or without dressing, in a bun, or on a salad.
Ingredients:
  • 1 (16 ounce) can salmon, drained and flaked
  • 2 eggs
  • 0.25 cup chopped fresh parsley
  • 2 tablespoons finely chopped onion
  • 0.25 cup Italian seasoned dry bread crumbs
  • 2 tablespoons lemon juice
  • 0.5 teaspoon dried basil
  • 1 pinch red pepper flakes
  • 1 tablespoon vegetable oil
  • 2 tablespoons light mayonnaise
  • 1 tablespoon lemon juice
  • 1 pinch dried basil
Instructions:
  • Combine salmon, eggs, parsley, onion, breadcrumbs, 2 tablespoons lemon juice, 1/2 teaspoon basil, and red pepper flakes in a bowl. Shape mixture into 6 patties, ensuring they are firmly packed and about 1/2 inch thick.
  • In a large skillet over medium heat, sizzle the oil. Add the patties once the oil is hot, sizzle each side for 4 minutes until beautifully browned.
  • Combine mayonnaise, 1 tablespoon lemon juice, and a pinch of basil in a small bowl. Serve as a flavorful sauce for your patties.
