Italian sausage topped with zesty tomato relish in a bun for a delicious bratwurst-style dish with Italian flair.
Ingredients:
  • 2 medium tomatoes, finely chopped (1 1/2 cups)
  • 2 medium yellow pear tomatoes, finely chopped (1/2 cup)
  • 1 tablespoon red wine vinegar
  • 1 teaspoon chopped fresh oregano leaves or 1/4 teaspoon dried oregano leaves
  • 1/4 cup Dijon mustard
  • 2 teaspoons chopped fresh oregano leaves
  • 6 fully cooked mild Italian sausages (1 lb)
  • 6 bratwurst buns, split
Instructions:
  • Combine tomatoes, vinegar, and 1 teaspoon of oregano in a medium bowl until fully incorporated. In a separate small bowl, mix mustard with 2 teaspoons of oregano.
  • Cook the sausages in a skillet according to the package instructions.
  • Spread a flavorful mustard mixture on the cut sides of the buns, then serve the sausages on the buns alongside a delicious tomato mixture.
