Elevate plain rice with zesty lemon for a refreshing summer side or protein pairing.
Ingredients:
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 green onions, chopped, white and green parts separated
  • 1 teaspoon lemon zest
  • 1 cup long grain rice
  • 0.25 teaspoon turmeric powder
  • salt and ground black pepper to taste
  • 1 cup low-sodium vegetable broth
  • 1 cup 2% milk
  • 3 tablespoons lemon juice
  • 1 tablespoon chopped fresh dill
Instructions:
  • In a nonstick pan over medium heat, combine and melt butter with oil. Saute white parts of green onions for 1 minute. Mix in garlic and lemon zest, cooking until fragrant for about 30 seconds. Add rice, then season with turmeric, salt, and pepper. Stir and cook for 1 minute.
  • Combine vegetable broth, milk, and lemon juice with the rice mixture in the pan and bring to a boil for about 5 minutes. Then simmer on low heat, cover, and cook until liquid evaporates, for 18 to 20 minutes.
  • Fluff the rice with a fork off the heat and season to taste. Top with green onion slices and chopped dill for garnish.
