Savor zesty lemon rice with turkey - ready in just one hour for a satisfying dinner.
Ingredients:
  • 1 cup uncooked long-grain brown rice
  • 2 3/4 cups water
  • 8 medium green onions, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 1 cup chicken broth
  • 1 1/2 lb uncooked turkey breast slices, about 1/4 inch thick, cut into 3x1/4x1/4-inch strips
  • 2 teaspoons grated lemon peel
  • 1/3 cup lemon juice
  • 1 tablespoon capers, rinsed, drained
  • 3 tablespoons chopped fresh parsley
Instructions:
  • Prepare the brown rice according to package instructions, then drain excess water if needed.
  • In a large skillet over medium heat, sauté onions and garlic in broth for about 3 minutes until onions are tender, stirring occasionally.
  • Add the turkey into the dish and cook for 3 minutes, stirring occasionally.
  • Add the cooked rice and all remaining ingredients except for parsley. Cook for about 3 minutes, stirring occasionally, until the rice is heated through and the turkey is fully cooked. Remove from heat and gently fold in the parsley.
