Lemon rice pilaf: Creamy rice with tangy lemon and sharp Parmesan, ideal with fish.
Ingredients:
  • 2 large egg yolks
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest, or to taste
  • 2 tablespoons butter
  • 1.5 cups uncooked jasmine rice
  • 3 cups chicken broth
  • 0.25 cup grated Parmesan cheese
  • 3 tablespoons chopped fresh parsley
Instructions:
  • Whisk together egg yolks, cream, lemon juice, and lemon zest until well blended.
  • In a saucepan over medium-high heat, melt butter. Add rice and cook, stirring constantly, until opaque, about 3 to 4 minutes. Quickly stir in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 20 to 25 minutes until rice is tender and liquid is absorbed.
  • Gently combine the lemon-cream mixture with the rice until fully incorporated, then fold in the Parmesan cheese and parsley.
