Zesty Southern Pasta and Bean Salad

Vibrant pasta salad with pinto beans, black beans, corn, and tomatoes.
Ingredients:
  • 2 cups small seashell pasta
  • 0.33333298563957 cup Italian-style salad dressing
  • 1 (15 ounce) can pinto beans
  • 1 (15 ounce) can black beans
  • 1 (15 ounce) can whole kernel corn, drained
  • 3 tomatoes, chopped
  • 1.5 tablespoons ground cumin
  • 0.5 tablespoon chili powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon dried red pepper flakes
Instructions:
  • First, bring a generously salted large pot of water to a vigorous boil. Cook pasta for 8 to 10 minutes until it's slightly firm when bitten; then drain and rinse under cold water. Transfer the pasta to a spacious mixing bowl, pour over dressing and sprinkle with salt, mixing thoroughly.
  • In a colander, mix pinto beans and black beans, rinse under cold water, then add to cooked pasta. Add corn, tomatoes, cumin, chili powder, onion powder, garlic powder, red pepper flakes, salt, and pepper to taste; gently toss together.
  • Refrigerate the salad until it's time to enjoy.
