Effortless elegance: Pasta salad with zesty herbed dressing, succulent crawfish, and crisp veggies - perfect for a casual meal or chic gathering.
Ingredients:
  • 1 (16 ounce) package farfalle (bow tie) pasta
  • 1 bunch fresh asparagus, trimmed and cut into 2 inch pieces
  • 1 tablespoon olive oil
  • 1 small red onion, chopped
  • 1 red or green bell pepper, chopped
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 pint grape tomatoes, halved
  • 1 pound peeled crawfish tails
  • 0.75 cup herbed vinaigrette salad dressing, or to taste
Instructions:
  • 1. Boil a large pot of lightly salted water. Cook farfalle pasta until tender, around 8 minutes. Drain. 2. Boil another pot of water. Cook asparagus until tender and bright green, about 3 minutes depending on thickness. Drain and shock in ice water to stop cooking.
  • In a large skillet over medium-high heat, heat olive oil. Sauté onion and bell pepper for 5 minutes. Stir in mushrooms and crawfish tails; cook for 10 minutes. Add asparagus and grape tomatoes; cook briefly. Place in a large serving bowl once done cooking.
  • Toss cooked pasta with vinaigrette dressing in the serving bowl. Enjoy right away or chill in the fridge before serving.
