Sorghum salad with crisp veggies and zesty Italian dressing: a flavorful whole grain dish with delicious textures.
Ingredients:
  • 3 cups water
  • 1 cup whole grain sorghum
  • 2 tomatoes, chopped
  • 1 rib celery, chopped
  • 0.5 small onion, chopped
  • 0.25 cup chopped cilantro, or to taste
  • 1 fresh jalapeno pepper, seeded and chopped
  • 1 clove garlic, crushed
  • 1 cup light Italian salad dressing
  • 2 tablespoons lemon juice
Instructions:
  • In a small pot, bring water and sorghum to a boil. Reduce heat to medium-low, cover, and simmer until sorghum is tender but still slightly firm, approximately 1 hour. Remove from heat, drain any excess water, and let cool for about 10 minutes.
  • In a large bowl, combine sorghum, tomatoes, celery, onion, cilantro, jalapeno, and garlic. Mix well. Add Italian dressing and lemon juice, then refrigerate covered for 30 minutes before serving.
