Zing-a-Ding-Ding Spaghetti with Albacore Tuna

Savory Italian-style sautéed tuna served over cheesy angel hair pasta.
Ingredients:
  • 0.33333334326744 cup olive oil, divided
  • 0.33333334326744 cup finely chopped red onion
  • 3 cloves garlic, minced
  • 1 (14 ounce) can stewed tomatoes
  • 1 teaspoon dried oregano
  • 1 pinch dried thyme
  • 2 (5 ounce) cans tuna, drained
  • 0.33333334326744 cup white wine
  • 0.5 lemon, juiced
  • 1 (16 ounce) package angel hair pasta
  • 0.33333334326744 cup grated Parmesan cheese
Instructions:
  • In a skillet over medium heat, warm up 1 tablespoon of oil. Add onion, garlic, tomatoes, oregano, and thyme. Cook for 5 minutes until the onion is tender. Stir in tuna, wine, lemon juice, and the rest of the olive oil. Keep cooking for another 10 minutes, stirring now and then.
  • 1. Boil a pot of lightly salted water. Cook angel hair pasta for 3 to 4 minutes until al dente. Drain pasta and transfer to a bowl.
  • Mix the cooked pasta with Parmesan cheese, then layer the skillet mixture on top before serving.
