Capture summer vibes: Lemongrass and ginger iced tea syrup.
Ingredients:
  • 1L (4 cups) water
  • 500g (2 1/3 cups) caster sugar
  • 1 stem lemongrass, bruised
  • 30g-piece fresh ginger, unpeeled, thinly sliced
  • 4 x 2cm-wide strips orange rind
  • 185ml (3/4 cup) orange juice
  • 10 orange pekoe tea bags
  • 1 orange (optional), zested
  • 30g-piece fresh ginger, extra (optional), peeled, thinly sliced
Instructions:
  • Combine water, sugar, fragrant lemongrass, fresh ginger, and zesty orange rind in a large saucepan. Heat over low heat for 5 minutes until sugar completely dissolves. Increase heat and bring to a boil, then let it gently boil for 7 minutes. Take off the heat and stir in fresh orange juice and tea bags. Allow the flavors to meld for 10 minutes. Discard the tea bags before moving on.
  • Split the orange zest and extra ginger evenly between two sterilized 500ml (2 cup) glass bottles. Filter the tea mixture through a fine sieve into a pitcher, removing any solids. Use a funnel to pour the cordial into the bottles.
