Zombie Eyes (Halloween Meatballs)

Make spooky Halloween meatball skewers with spaghetti for a fun and flavorful party dish.
Ingredients:
  • 1 (8 ounce) package spaghetti
  • 0.5 cup grated Parmesan cheese
  • 0.33333334326744 cup panko bread crumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon parsley flakes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 pound lean ground beef
  • 8 black olives, halved
  • 1 (1 ounce) stick string cheese, cut into 16 slices
  • 1 (16 ounce) jar spaghetti sauce
Instructions:
  • 1. Bring a pot of salted water to a boil. Cook spaghetti until al dente, about 12 minutes. Drain and set aside.
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Combine Parmesan cheese, bread crumbs, egg, garlic, parsley, basil, and oregano in a large mixing bowl. Add ground beef and mix thoroughly by hand to form 16 equal-sized meatballs using a cookie scoop.
  • In a large skillet over medium-high heat, sear meatballs in olive oil for 3 minutes per side until golden brown. Use tongs to transfer the cooked meatballs to a baking sheet.
  • Place the golden brown meatballs in the oven and bake for 8 minutes.
  • As the meatballs bake, make the olive "pupils" by punching a hole in each olive half with a plastic straw. Then, use the same straw to create a hole in the center of each string cheese slice. Place the olive piece inside the cheese hole to make the "eyes."
  • Allow the meatballs to cool in the oven until they are safe to handle.
  • Create spooky zombie eyes by wrapping cooked spaghetti around 16 forks. Skewer a meatball onto each fork and place them on a serving platter. Add a small amount of spaghetti sauce on the meatballs as a base for the "eyes." Top each one with an olive and cheese "eye." Finish by drizzling more spaghetti sauce over the pasta on the forks.
