Zucchini, carrot and cheddar fritters

Try this delicious and nutritious vegetable-packed dinner!
Ingredients:
  • 2 large zucchini, grated
  • 2 large carrots, grated
  • 2 green onions, thinly sliced
  • 165.00 ml finely grated cheddar
  • 128.75 gm milk
  • 36.80 gm rice bran oil
  • Tomato relish, to serve
  • Salad, to serve
Instructions:
  • In a bowl, mix together zucchini, carrot, onion, cheddar, and flour. Season with salt and pepper, then add milk and egg. Stir well until fully combined.
  • 1. Heat oil in a large frying pan over medium-high heat. Drop 1/4 cup of batter into the pan and spread it into a flat round shape. Make a total of 4 fritters. Cook each side for 3 to 4 minutes until nicely browned. Place on a paper towel-lined plate and cover loosely to keep warm. Repeat with the remaining batter, adding more oil if necessary.
  • Plate the fritters alongside tomato relish and a fresh salad.
