Zucchini and Pecan Saute

Butter-sauteed zucchini with pecans and parmesan; perfect on its own or as a delectable baked potato topping.
Ingredients:
  • 3 tablespoons butter
  • 0.33333331346512 cup chopped pecans
  • 1 pound fresh zucchini, sliced
  • 1 tablespoon grated Parmesan cheese
Instructions:
  • In a large skillet over medium heat, melt 1 tablespoon of butter until it sizzles. Toss in the pecans and sauté until they are golden brown, which should take around 5 minutes. Take the pecans out of the skillet and set them aside.
  • Add the last 2 tablespoons of butter to the skillet and melt. Saute the zucchini until soft, then combine with pecans and cheese before serving.
