Delicious zucchini blueberry muffins with olive oil, cinnamon, and pecans - a tasty way to add veggies to your morning or snack time!
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.25 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 cup olive oil
  • 0.25 cup milk
  • 1.5 teaspoons vanilla extract
  • 1 cup shredded zucchini
  • 0.5 cup fresh blueberries
  • 0.5 cup chopped pecans
Instructions:
  • Preheat the oven to 350°F (175°C), and prepare a 12-cup muffin tin by greasing it or lining with paper liners.
  • In a large bowl, mix together flour, white sugar, brown sugar, baking soda, cinnamon, and salt.
  • In a separate bowl, combine olive oil, milk, egg, and vanilla, whisking until smooth. Add this mixture to the flour mixture and stir until just combined. Gently fold in zucchini, blueberries, and pecans until well mixed. Spoon batter into muffin cups, filling each 2/3 full.
  • Bake in the oven until a toothpick inserted into the center of a muffin comes out clean, about 20-25 minutes.
