Delicious blueberry zucchini bread with juicy blueberries and shredded zucchini, makes 4 mini loaves ideal for gifting.
Ingredients:
  • 2.25 cups white sugar
  • 1 cup vegetable oil
  • 3 large eggs, lightly beaten
  • 3 teaspoons vanilla extract
  • 2 cups shredded zucchini
  • 3 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 1 pint fresh blueberries
Instructions:
  • Prepare all ingredients.
  • Preheat the oven to 350°F (175°C) and lightly grease 4 mini loaf pans.
  • In a spacious bowl, whisk together sugar, oil, eggs, and vanilla until well combined. Gently mix in the zucchini.
  • Combine flour, cinnamon, salt, baking powder, and baking soda, then mix until just incorporated.
  • Carefully incorporate the blueberries into the batter. Transfer the batter into the pans.
  • Bake until a knife comes out clean when inserted in the center of the loaf, approximately 50 minutes in the preheated oven.
  • Allow the pans to cool for 20 minutes, then transfer the cakes onto a wire rack to cool completely. Enjoy your delicious creation!
