Baked zucchini, potato, and red bell pepper make a flavorful and effortless side dish.
Ingredients:
  • 4 medium potatoes, peeled and cut into large chunks
  • 2 medium zucchini, quartered and cut into large pieces
  • 1 medium red bell pepper, seeded and chopped
  • 0.25 cup olive oil
  • 1 clove garlic, sliced
  • paprika to taste
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Combine potatoes, zucchini, red bell pepper, bread crumbs, olive oil, and garlic in a baking pan. Sprinkle with paprika, salt, and pepper.
  • Roast the potatoes in the preheated oven, stirring occasionally, until tender and lightly browned, for approximately 1 hour.
