Whip up this quick and tasty vegetarian zoodle bake for a perfect midweek dinner in just 15 minutes!
Ingredients:
  • 800g sweet potato, peeled
  • 4 green zucchini, trimmed
  • 2 yellow zucchini, trimmed
  • 1 tsp dried oregano leaves
  • 1/2 tsp dried chilli flakes
  • 300g cherry truss tomatoes
  • 100g drained Feta Cubes
  • 100g (1 cup) coarsely grated Mozzarella Cheese Block (500g)
  • Baby rocket, to serve
Instructions:
  • Preheat the oven to 180C (160C fan forced) and generously grease a 2L (8 cup) baking dish.
  • Spiralize sweet potato and zucchini into noodles, then place them in a large bowl. Mix in olive oil, garlic, oregano, chili, and season with salt and pepper. Gently toss to combine. Transfer the veggie noodle mixture to a baking dish and top with tomatoes. Bake for 40 minutes until tomatoes are blistered and sweet potato is tender.
  • Heat the grill on high until hot. Sprinkle feta cubes and grated mozzarella over the vegetables. Grill for 5 minutes until the mozzarella is melted and golden. Garnish with rocket before serving.
