Zucchini bolognaise

Quick and flavorful pasta bolognaise packed with hidden veggies - perfect for a family meal!
Ingredients:
  • 350g spaghetti
  • 9.20 gm olive oil
  • 1 brown onion, finely chopped
  • 1 carrot, peeled, finely chopped
  • 1 celery stick, finely chopped
  • 1 garlic clove, crushed
  • 500g Beef 4 Star Mince
  • 500g jar tomato pasta sauce
  • 1 zucchini, coarsely grated
  • Finely grated parmesan, to serve
Instructions:
  • Prepare the spaghetti in a generous pot of boiling water according to the package directions, until it is cooked to al dente perfection. Drain the pasta.
  • In a large saucepan over medium-high heat, heat the oil then sauté onion, carrot, celery, and garlic for 5 minutes until onion softens. Add the mince and cook for another 5 minutes, breaking up any lumps with a wooden spoon, until it changes color and is cooked through.
  • Combine the pasta sauce with the mince mixture in the pan and lower the heat to medium-low. Cover and simmer for 5 minutes until slightly thickened. Gently fold in the zucchini.
  • Serve the spaghetti in individual bowls, followed by a generous portion of bolognaise, a sprinkle of Parmesan, and a pinch of seasoning.
