Zucchini Bread with Dried Cranberries

Tangy and moist loaves bursting with flavor!
Ingredients:
  • 1.5 cups whole wheat flour
  • 2 tablespoons ground flax seed
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 1 tablespoon vanilla extract
  • 0.5 cup white sugar
  • 0.5 cup brown sugar
  • 0.5 cup applesauce
  • 0.5 cup vegetable oil
  • 0.25 cup shredded carrots
  • 2 cups shredded zucchini
  • 1 cup dried cranberries
  • 0.5 cup chopped walnuts
Instructions:
  • 1. Preheat your oven to 350 degrees F (175 degrees C) while you prepare two 9x5 inch loaf pans by greasing and flouring them. 2. In a bowl, combine all-purpose flour, whole wheat flour, flax seed, cinnamon, salt, baking powder, and baking soda. Give it a good whisk and set it aside.
  • In a mixing bowl, combine eggs, vanilla, white sugar, brown sugar, applesauce, and vegetable oil until smooth. Fold in flour mixture, carrots, zucchini, cranberries, and walnuts until evenly mixed. Transfer the batter into two loaf pans.
  • Bake at the preheated oven for about 60 minutes or until a toothpick inserted into the center comes out clean. Allow it to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
