"Moist zucchini bread with dried fruit and nuts - a delicious and easy recipe to make two loaves, perfect for sharing!"
Ingredients:
  • 3 medium zucchini, or as needed
  • 1.5 cups white sugar
  • 0.5 cup vegetable oil
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon orange extract
  • 1 cup raisins
  • 1 cup dried cranberries
  • 1 cup chopped dried apricots
  • 1 cup finely chopped pecans
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.25 teaspoon baking powder
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease and flour two 9x5-inch loaf pans.
  • Grate zucchini and firmly press to remove excess moisture until you have 2 cups of dried zucchini.
  • In a large bowl, combine sugar, vegetable oil, and eggs. Mix in zucchini, sour cream, and orange extract. Add raisins, cranberries, apricots, and pecans. Fold in flour, baking powder, and baking soda. Divide batter among loaf pans.
  • Bake in the preheated oven for about 60 minutes or until a toothpick inserted in the centers comes out clean.
