Zucchini Cake with Cream Cheese Applesauce Icing

Zucchini sheet cake with cinnamon applesauce cream cheese frosting.
Ingredients:
  • 3 eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2.3333332538605 cups all-purpose flour
  • 0.25 teaspoon baking powder
  • 2 cups shredded zucchini, squeezed dry
  • 1 (8 ounce) package cream cheese, softened
  • 3 tablespoons butter, softened
  • 0.5 cup cinnamon-flavored applesauce
  • 1 teaspoon ground nutmeg
  • 2 cups confectioners' sugar, or to taste
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), and generously grease a 9x13-inch baking dish.
  • In a large bowl, thoroughly whisk together eggs, vegetable oil, white sugar, and vanilla extract until well blended. In a separate bowl, combine flour, baking powder, baking soda, and salt. Gently fold the flour mixture into the wet ingredients, then add zucchini and mix well. Transfer the batter to the baking dish and proceed with baking.
  • Bake in the preheated oven for around 40 minutes until the cake is lightly browned and a toothpick inserted into the center comes out with moist crumbs. Allow the cake to cool completely.
  • In a bowl, blend cream cheese and butter until velvety; fold in applesauce and nutmeg. Gradually add confectioners' sugar until the frosting is smooth and spreadable; frost the cooled zucchini cake.
