Decadent chocolate zucchini cake with luscious cream cheese frosting.
Ingredients:
  • 2.5 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 cup unsweetened cocoa powder
  • 0.25 cup vegetable oil
  • 2 cups white sugar
  • 3 eggs
  • 2 cups shredded zucchini
  • 0.25 cup milk
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 9x13 inch pan with grease and flour. In a bowl, sift together flour, baking powder, baking soda, salt, cinnamon, and cocoa powder and set aside.
  • Cream together the butter, oil, and sugar in a large bowl until fluffy. Beat in the eggs one at a time, then mix in the vanilla. In a separate bowl, combine shredded zucchini with milk. Alternately beat in the flour mixture and zucchini mixture. Pour the batter into the prepared pan.
  • Place your creation in the warm oven for 55 to 60 minutes, or until a toothpick inserted in the middle emerges clean. Let it cool down before indulging.
