Zucchini Foil Packets

Grilled zucchini slices with herbed cheese butter, cooked to perfection in foil packets.
Ingredients:
  • 0.25 cup unsalted butter, melted
  • 0.25 cup freshly grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Kosher salt and freshly ground black pepper, to taste
  • 4 zucchini, cut into 1/4-inch rounds
  • Reynolds Wrap® Heavy Duty Aluminum Foil
  • 2 tablespoons chopped fresh parsley leaves
Instructions:
  • Heat up your grill on high heat using either gas or charcoal.
  • Combine creamy butter, aromatic Parmesan cheese, fresh basil, and fragrant oregano in a small bowl. Season generously with salt and pepper to enhance the flavors.
  • Divide the zucchini evenly onto 3 or 4 sheets of foil. Drizzle the zucchini with the butter mixture. Fold and seal the foil packets, allowing space for heat circulation.
  • Grill foil packets until zucchini is tender, about 15 to 20 minutes.
  • Sprinkle with fresh parsley and enjoy while warm.
