Savor the summer with light, gluten-free zucchini noodles as a tasty pasta alternative.
Ingredients:
  • 6 zucchini
  • 2 teaspoons salt
  • 3 tablespoons margarine
  • 1 clove garlic, minced
  • salt and black pepper to taste
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Slice the zucchini into thin, noodle-like strips using a mandoline. Season with 2 teaspoons of salt and let sit in a colander for 30 minutes to drain excess moisture.
  • Bring a pot of water to a boil, then add the zucchini and cook for one minute. Drain and rinse with cold water to stop cooking.
  • In a large skillet over medium high heat, melt butter until sizzling. Add zucchini and garlic, stirring until they are just tender, approximately 5 minutes. Season with salt and pepper to taste, then generously sprinkle with Parmesan cheese before serving.
