Zucchini custard pie with brown sugar crumb topping.
Ingredients:
  • 1 (9 inch) unbaked pie crust
  • 1 cup peeled, cubed zucchini
  • 2 eggs
  • 0.5 cup butter, melted
  • 2 tablespoons all-purpose flour
  • 0.5 teaspoon vanilla extract
  • 0.5 cup all-purpose flour
  • 0.5 cup brown sugar
  • 3 tablespoons butter
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Line a 9-inch pie dish with the pie crust and set it on a baking sheet.
  • Puree zucchini in a food processor until smooth. Combine the zucchini puree with eggs, 1 cup sugar, 1/2 cup melted butter, 2 tablespoons flour, and vanilla extract in a bowl. Pour the mixture into the pie crust.
  • In a bowl, combine 1/2 cup of flour, brown sugar, and 3 tablespoons of butter. Use a pastry cutter to create a crumbly topping. Sprinkle evenly over the pie filling.
  • Bake in the oven until the filling is set and the topping is lightly browned, which should take around 45 minutes. Let it cool for a minimum of 30 minutes before serving.
