Savory zucchini pie with shredded zucchini, cheese, herbs, and baking mix for a delicious crustless quiche alternative.
Ingredients:
  • 3 cups zucchini, diced
  • 1/2 teaspoon salt
  • 4 eggs, beaten
  • 1 cup buttermilk baking mix
  • 1 onion, chopped
  • 1/2 cup shredded white Cheddar cheese
  • 0.5 cup grated Parmesan cheese
  • 0.5 teaspoon dried marjoram
  • 1 teaspoon chopped parsley, or to taste
  • ground black pepper to taste
Instructions:
  • Assemble all your ingredients.
  • In a bowl, mix shredded zucchini with 1/2 teaspoon of salt. Allow it to sit for 15 minutes. Then, transfer the zucchini to a clean kitchen towel and squeeze out the excess liquid over the sink.
  • Start by preheating your oven to a toasty 350 degrees F (175 degrees C), then generously grease a 9-inch pie plate.
  • In a large bowl, mix together zucchini, eggs, baking mix, onion, melted butter, Cheddar cheese, Parmesan cheese, rosemary, parsley, and pepper until well combined.
  • Spread the mixture evenly in the prepared pie plate or baking pan.
  • Bake in the oven until golden brown and a knife inserted in the center comes out clean, approximately 45 minutes.
