Zucchini Apple Pie

Surprise everyone with a zucchini pie that tastes just like apple! Saute zucchini in lemon juice, mix with sugar, cinnamon, nutmeg, and flour. Fill pastry crust, add butter, top with crust, bake for 40 minutes. Delicious deception!
Ingredients:
  • 1 recipe pastry for a 9 inch double crust pie
  • 2 large zucchini
  • 2 tablespoons lemon juice
  • 1 pinch salt
  • 1.25 cups packed brown sugar
  • 1.5 teaspoons ground cinnamon
  • 1.5 teaspoons cream of tartar
  • 1 pinch ground nutmeg
Instructions:
  • Peel the zucchini, remove seeds, and cut into quarters lengthwise. Then cut crosswise, similar to preparing apples for a pie. Combine 4 cups of chopped zucchini with lemon juice and salt. Sauté in a pan until tender-crisp.
  • Combine brown sugar, cinnamon, cream of tartar, nutmeg, and flour in a bowl. Stir in cooked zucchini until well mixed; the mixture will be slightly runny, which is perfectly fine.
  • Spread the filling evenly over a 9-inch pie crust, dot with butter, and cover with the top crust. Bake at 400°F (205°C) for 40 minutes, or until beautifully golden brown.
