Indulgent chocolate apple zucchini cake, perfect for picnics. Enjoy slices on napkins, no need for utensils.
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease an 8x8-inch baking dish.
  • Combine zucchini, apple, eggs, brown sugar, olive oil, and vanilla extract in a mixing bowl, and gently mix until well combined.
  • Combine whole wheat flour, all-purpose flour, cocoa powder, baking soda, kosher salt, and baking powder in a separate bowl. Fold into the zucchini and apple mixture until well combined. Transfer batter to the baking dish and top with chocolate chunks and pepitas.
  • Bake in a preheated oven for about 25 minutes or until a tester comes out clean. Allow to cool before slicing.
