Zucchini mock apple pie crumble bars - a sneaky, sweet treat for picnics and parties.
Ingredients:
  • 5 cups all-purpose flour
  • 1.75 cups white sugar
  • 0.5 teaspoon ground cinnamon
  • 1.5 cups butter, at room temperature
  • 0.75 cup white sugar
  • 0.66666668653488 cup lemon juice
  • 0.25 teaspoon ground nutmeg
  • 7 cups peeled, seeded, and sliced zucchini
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease the sides of a 10x15-inch jelly roll pan.
  • Combine flour, 1 3/4 cups sugar, and 1/2 teaspoon cinnamon in a large bowl, then use a fork to cut in the butter until a crumbly dough forms. Set aside 1/2 cup of the dough.
  • Press a luxurious layer of half the dough firmly into the jelly roll pan to create a delectable crust.
  • Bake until golden brown, approximately 10 minutes in the preheated oven.
  • In a large saucepan, mix 3/4 cup sugar, lemon juice, 1/2 teaspoon cinnamon, and nutmeg. Add sliced zucchini and bring to a boil, stirring constantly until zucchini starts to soften. Then, add 1/2 cup reserved dough and continue cooking and stirring until the mixture thickens, about 3 to 5 minutes.
  • Evenly layer the zucchini mixture over the crust, then gently press the remaining dough on top.
  • Place the dish back in the oven and bake until the top is golden brown, for about 35 to 45 minutes. Allow it to cool for about 20 minutes before cutting it into 24 bars.
