Zucchini, onion, eggs, mozzarella, and herbs baked in a flaky crescent roll crust for a delicious cheesy zucchini pie.
Ingredients:
  • 0.25 cup butter
  • 4 cups thinly sliced zucchini
  • 1 cup coarsely chopped onion
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • 2 eggs, well beaten
  • 1 (8 ounce) package shredded mozzarella cheese
  • 1 (8 ounce) tube refrigerated crescent rolls
  • 2 tablespoons yellow mustard
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • In a skillet over medium heat, melt butter and sauté zucchini and onion until tender for about 10 minutes. Stir in salt, pepper, garlic powder, basil, and oregano until well combined.
  • Combine eggs and creamy mozzarella cheese in a bowl, then fold in the zucchini mixture.
  • Divide crescent dough into two rectangles and line an 8x12-inch baking dish; press dough into the bottom and slightly up the sides to create a crust. Spread mustard over the crust, then pour the zucchini-egg mixture into the crust.
  • Bake in the preheated oven for 18 to 20 minutes until the center is set and has a light golden brown color. Let it cool before slicing into squares or wedges.
