Cheesy zucchini slices topped with tomato sauce, pan-fried for a delicious crustless pizza bites.
Ingredients:
  • 0.25 cup olive oil, or as needed
  • 1 large zucchini, sliced into 1/4-inch pieces
  • 0.125 teaspoon red pepper flakes
  • 0.125 teaspoon garlic salt, or to taste
  • 0.125 teaspoon onion salt, or to taste
  • 0.25 cup grated Romano cheese
  • 1 cup tomato sauce
  • 1 cup shredded Mexican 4-cheese blend
Instructions:
  • Heat a generous amount of olive oil in a large skillet over medium heat. Place zucchini slices in the skillet and season with red pepper flakes, garlic salt, and onion salt. Cook the zucchini until slightly softened, about 3 to 4 minutes per side.
  • Add a generous sprinkle of Romano cheese and a spoonful of tomato sauce on each slice, allowing the cheese to just start melting for 2 to 3 minutes. Layer on a Mexican cheese blend over the tomato sauce, cover the skillet, and cook until the cheese melts beautifully, approximately 5 minutes.
