Indulge in a decadent dinner pizza with creamy mascarpone, fresh zucchini, all on a crispy crust.
Ingredients:
  • 3 tablespoons olive oil
  • 1 zucchini, thinly sliced into rounds

  • 1 cup all-purpose flour
  • 2 teaspoons active dry yeast
  • 0.25 teaspoon salt
  • 2 tablespoons vegetable oil
  • 0.33333334326744 cup warm water
  • 0.25 cup prepared pizza sauce
  • 0.5 cup shredded mozzarella cheese
  • 3 tablespoons mascarpone cheese
Instructions:
  • In a skillet over medium heat, sizzle the zucchini in the warm olive oil until it turns a beautiful golden brown, about 5 to 8 minutes per side. Set aside once done cooking.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and give your 8-inch pizza pan a quick spray with cooking spray.
  • In a bowl, mix the flour, yeast, sugar, and salt. Gradually add vegetable oil and warm water while stirring. Knead the dough until smooth. Roll out the dough on a floured surface to fit the pizza pan, making sure it's thin. Fold over the edges to create a rim. Spread pizza sauce, sprinkle with mozzarella cheese, and top with zucchini slices.
  • Place the pizza in the preheated oven and bake until the cheese is melted and the crust is golden brown, usually around 15 minutes. Drizzle dollops of mascarpone cheese over the pizza, allowing it to melt and naturally spread over the toppings. Let the pizza cool for 5 to 10 minutes before slicing and serving.
