Zucchini and raisin muffins: Moist, sweet, and perfect for breakfast or snacks on the run.
Ingredients:
  • 0.75 cup all-purpose flour
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.25 cup vegetable oil
  • 1 cup grated zucchini
  • 0.25 cup raisins
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin with paper liners.
  • Combine the flour, salt, nutmeg, baking soda, and baking powder in a bowl, mixing well.
  • In a large bowl, use an electric mixer to blend sugar, vegetable oil, and egg until smooth. Gently mix in zucchini and raisins, then add the flour mixture and combine. Fill the muffin cups 2/3 full with the batter.
  • Bake in the preheated oven until the muffins are golden and the tops spring back when lightly pressed, for about 25 minutes.
