Protein-packed egg, zucchini, and scallion cups - perfect for busy people on the move!
Ingredients:
  • cooking spray
  • 7 egg whites
  • 3 eggs
  • 2 tablespoons half-and-half
  • 2 cups shredded zucchini
  • 1 cup chopped green onion
  • 3 tablespoons grated Parmigiano-Reggiano cheese
Instructions:
  • Preheat your oven to 350°F (175°C) and grease 12 muffin cups with cooking spray.
  • Combine whisked egg whites, eggs, and half-and-half in a bowl. Gently fold in zucchini, green onion, and cheese. Transfer mixture into prepared muffin cups.
  • Bake in the preheated oven for 30-35 minutes until the center is just set.
