Zucchini and Swiss cheese stuffed chicken breasts, baked to perfection.
Ingredients:
  • 4 bone-in chicken breasts, with skin
  • 3 tablespoons butter
  • 0.5 small onion, chopped
  • 1 tablespoon chopped fresh parsley
  • 0.5 teaspoon dried basil
  • 2.5 cups shredded zucchini
  • 3 slices bread, torn into pieces
  • 1 egg, beaten
  • 0.75 cup shredded Swiss cheese
  • 0.125 teaspoon pepper
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously grease a 9x13 inch baking dish.
  • Prepare the chicken breasts by gently separating the skin to create a pocket without tearing, then set aside.
  • In a skillet, melt butter over medium heat. Sauté onion, parsley, and basil until onion is translucent, about 5 minutes. Add zucchini and cook until tender, about 2 minutes. Remove from heat and mix in torn bread, egg, Swiss cheese, salt, and pepper until combined.
  • Fill the chicken breasts with the zucchini mixture, transfer to the baking dish, and bake in the preheated oven until the chicken is golden brown and stuffing is heated through, about 50-60 minutes.
