Delicious chicken stuffed with ham and cheese, topped with crunchy breadcrumbs.
Ingredients:
  • 4 chicken breast fillets
  • 4 slices leg ham
  • 100g vintage cheddar, thinly sliced
  • Olive oil spray
  • 4 zucchini, quartered lengthways
  • 30g (1/3 cup) dried sage & onion stuffing mix
Instructions:
  • Preheat the oven to 180°C. Slice each fillet horizontally without cutting all the way through, then lay the fillet flat. Place it between two sheets of freezer-proof paper and gently pound with a rolling pin until it is 5mm thick.
  • Lay a slice of ham and one-quarter of cheddar on the top half of each fillet. Fold over to seal the filling. Transfer to a baking tray, spray with oil, season, and bake for 25-30 minutes until fully cooked.
  • Preheat the barbecue grill on high while lightly spraying the zucchini with oil. Cook the zucchini for 2 minutes on each side, or until tender.
  • In a frying pan over medium heat, sizzle the stuffing in oil for 2-3 minutes until crispy. Serve the chicken and zucchini on plates, topped with the stuffing.
