Decadent zucchini casserole with creamy slices, cheesy stuffing, and Cheddar cheese. Perfect for a delicious side dish.
Ingredients:
  • 2 pounds zucchini, sliced crosswise 1/3-inch thick
  • 1 onion, diced
  • 1 (10.75 ounce) can cream of chicken soup
  • 8 ounces sour cream
  • salt and ground black pepper to taste
  • 1 (6 ounce) package corn bread stuffing mix (such as Kraft® Stove Top®)
  • 0.25 cup butter, melted
  • 1 cup grated Cheddar cheese
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • In a pot, bring 1/2 cup of lightly salted water to a boil. Cook zucchini and onion uncovered until crisp-tender, approximately 5 minutes. Drain in a colander and transfer to a bowl.
  • Combine the soup, sour cream, zucchini, and onions, then season with salt and pepper.
  • Mix stuffing mix and butter together in a small bowl until well combined.
  • Spread half of the stuffing mix evenly on the bottom of a 9x13-inch baking dish. Top with the zucchini mixture and sprinkle half of the Cheddar cheese. Layer the remaining stuffing mix, followed by the rest of the cheese. Cover the baking dish with aluminum foil before baking.
  • Bake in a preheated oven until bubbly, approximately 30 minutes. Remove the cover and bake until the cheese is melted and golden brown, around 15 minutes.
