Creamy zucchini casserole with mushrooms, onions, and carrots, topped with buttery breadcrumbs.
Ingredients:
  • 6 cups diced zucchini
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded carrots
  • 0.5 cup chopped onion
  • 1 (6 ounce) package dry bread stuffing mix
  • 0.5 cup butter, melted
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 2-quart casserole dish.
  • Bring a pot of salted water to a vigorous boil. Add zucchini and cook for about 5 minutes until crisp-tender. Drain well.
  • Combine zucchini with condensed soup, sour cream, carrots, and onion in a large bowl.
  • Combine stuffing mix and melted butter in a bowl. Spread half of the mixture in the casserole dish, add zucchini mixture, and top with the remaining stuffing mixture.
  • Bake in the preheated oven for 20 minutes until the top is a beautiful golden brown.
