Zucchini and eggs cook together for a simple and tasty summer breakfast.
Ingredients:
  • 1.5 tablespoons olive oil
  • 2 large zucchini, cut into large chunks
  • salt and ground black pepper to taste
  • 2 large eggs
  • 1 teaspoon water, or as desired
Instructions:
  • In a skillet over medium-high heat, saute zucchini in oil until tender, about 10 minutes. Season with salt and black pepper.
  • Whisk eggs in a bowl with a fork, then mix in water until smooth. Pour over zucchini and cook until scrambled and cooked through, about 5 minutes. Season with salt and black pepper to taste.
