Zucchini-Carrot Bars

Upgraded Betty Crocker™ carrot cake mix with zucchini, resulting in delicious bars topped with homemade cream cheese icing.
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Carrot Cake Mix
  • 2 small zucchini, grated
  • 1/2 cup butter, melted
  • 3 tablespoons milk
  • 4 cups powdered sugar
  • 1 oz cream cheese (from 3-oz package)
  • 1 to 2 tablespoons milk
  • 1 teaspoon vanilla
  • 1 pint (2 cups) fresh raspberries
  • Fresh mint leaves
Instructions:
  • Preheat oven to 350°F and line the bottom of a 15x10x1-inch pan with parchment paper or spray with cooking oil. Mix bar ingredients in a large bowl until well combined, then spread the mixture in the pan.
  • Bake for 15 to 20 minutes until golden brown and a toothpick inserted in the center comes out clean. Allow to cool completely for about 1 hour.
  • Use an electric mixer to whip up frosting ingredients in a large bowl until smooth. Adjust consistency by adding more milk, if necessary. Spread the frosting over the cooled bars, then cut into 2x1-inch pieces. Top with raspberries and mint leaves for a beautiful touch. Refrigerate for storage.
