French-style Zucchini and Corn Gratin: Quick and delicious dinner ready in one hour.
Ingredients:
  • 2 tablespoons butter or margarine
  • 1 medium onion, chopped (1/2 cup)
  • 6 cups sliced zucchini (1 3/4 lb)
  • 1 cup frozen whole kernel corn (from 1-lb bag)
  • 1/2 cup water
  • 1 egg
  • 3/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/4 cups cornbread stuffing mix
  • 1 cup shredded Cheddar cheese (4 oz)
Instructions:
  • Preheat oven to 350°F and grease a 11x7-inch glass baking dish with cooking spray. In a large nonstick skillet, melt 1 tablespoon of butter over medium-high heat. Sauté onion for 2 minutes, stirring frequently, until crisp-tender.
  • Combine zucchini, corn, and water in the skillet. Cook covered over medium heat for 9 to 11 minutes, stirring occasionally, until zucchini is tender. Remove from heat and gently mash zucchini slightly with a fork directly in the skillet.
  • In a large bowl, whisk together egg, milk, salt, and pepper until smooth. Mix in zucchini, 3/4 cup stuffing mix, and 1/2 cup cheese. Transfer mixture to a baking dish.
  • Melt the remaining 1 tablespoon of butter in a small microwavable bowl on High for 15 to 20 seconds until melted. Stir in the rest of the stuffing mix and 1/2 cup of cheese, then sprinkle the mixture evenly over the zucchini.
  • Bake without a cover for 25-30 minutes or until fully cooked and the top is beautifully golden. Rest for 5 minutes before indulging in this delicious dish.
