"Fried" Wild Rice with Corn

Spicy wild rice and corn skillet - a quick and satisfying meal in just 25 minutes!
Ingredients:
  • 1/2 cup vegetable or chicken broth
  • 8 medium green onions, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 1/2 cup sliced mushrooms (1 1/2 ounces)
  • 1/4 cup shredded carrot
  • 1 cup frozen whole kernel corn
  • 3 cups cooked wild rice
  • 1 tablespoon soy sauce
  • 1/8 teaspoon pepper
  • Chopped green onion, if desired
Instructions:
  • In a 10-inch nonstick skillet, bring the broth to a boil over medium-high heat. Add 1/2 cup of onions, garlic, mushrooms, and carrot to the broth. Cook for 5 to 8 minutes, stirring often, until the vegetables are crisp-tender.
  • Add the corn and wild rice into the mixture, ensuring to stir constantly for 3 minutes until well combined (the mixture may appear dry).
  • Add the soy sauce and pepper, cook until steaming. Top with fresh onion for extra flavor.
