Crispy fried wild morel mushrooms - a delicious and prized earthy treat!
Ingredients:
  • 1 pound morel mushrooms
  • 0.5 cup oil for frying
  • 0.75 cup milk
  • 1 (4 ounce) packet saltine crackers, finely crushed
  • salt and black pepper to taste
Instructions:
  • Cut any large morels in half and soak them in a bowl of cold, lightly salted water in the fridge for 5 minutes to remove any dirt. Rinse and repeat this process twice more. Make sure to check for stones or insects in the crevices. Give the mushrooms a final thorough rinse and let them drain on paper towels.
  • In a large skillet, warm oil over medium heat. Meanwhile, whisk eggs and milk in a shallow bowl. Dip morels in egg mixture, coat with cracker crumbs, and carefully transfer to the hot oil. Fry until golden brown on both sides, as morels cook rapidly.
  • Once the mushrooms have achieved a golden brown color, transfer them to a paper towel to drain. Season with salt and pepper according to your taste preference.
