Flavorful black bean dish with jalapeno, garlic, and onion - perfect for tacos, breakfast, rice, or solo enjoyment.
Ingredients:
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 1 cup chicken broth, or more to taste, divided
  • 1 (6 ounce) can tomato paste
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 2 cloves garlic, or more to taste, minced
  • 1 teaspoon white sugar
  • 1 dash chipotle-flavored hot sauce, or more to taste
Instructions:
  • In a heavy pot over low heat, combine black beans, 1 cup chicken broth, tomato paste, and cumin. Simmer for 5 to 10 minutes until hot.
  • In a skillet over medium-high heat, saute onion, green bell pepper, and jalapeno pepper in olive oil until softened, for about 5 to 7 minutes. Add garlic and cook until fragrant, about 1 to 2 minutes. Transfer the cooked vegetables to the pot with the beans and mix well.
  • Blend sugar into the bean mixture, pour additional chicken broth for desired consistency, add hot sauce to taste, and simmer until vegetables enhance the broth, about 10-15 minutes.
