Wholesome whole wheat pancakes with buttermilk for a delicious and fluffy breakfast the whole family will enjoy.
Ingredients:
  • 2 cups whole wheat flour
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2.25 cups buttermilk
  • 4 tablespoons vegetable oil, divided
Instructions:
  • Combine flour, sugar, baking powder, baking soda, and salt in a bowl and whisk until well mixed.
  • In a separate bowl, vigorously whisk together buttermilk, eggs, and 3 tablespoons of oil until thoroughly mixed. Pour this mixture into the dry ingredients and gently stir until just combined, ensuring not to overmix; expect a slightly thick batter.
  • In a cast iron skillet over medium-low heat, heat the remaining 1 tablespoon oil for 5 minutes. Pour 1/3 cup of batter for each pancake into the skillet in batches. Use a spoon to spread the batter into circles and cook until the bottom is browned and bubbles form on top, this should take 1 1/2 to 2 minutes. Flip the pancakes and cook until they are set in the middle and browned on the other side, which should be around 2 more minutes.
