Whip up this flavorful satay noodle salad with a tasty peanut dressing - a family favorite!
Ingredients:
  • 500g beef rump steak
  • 250 ml can satay sauce
  • 200g frozen podded edamame
  • 270g Organic Soba noodles
  • 1 large carrot, peeled, shredded
  • 2 green shallots, thinly sliced
  • 4 baby cucumbers, quartered lengthways
  • 50g baby spinach
  • 40g (1/4 cup) chopped salted peanuts
Instructions:
  • Drench the beef in 60ml (1/4 cup) satay sauce. Preheat a large non-stick pan over medium heat and spray with olive oil. Sear the beef for 3 minutes per side for medium-rare or desired doneness. Transfer beef to a plate, cover with foil, and let it rest for 5 minutes. Slice and enjoy.
  • Place the edamame in a large heatproof bowl and cover with boiling water. Let sit for 1 minute, then drain. Cook the noodles according to package instructions.
  • Transfer the leftover satay sauce to a microwave-safe bowl and heat it up, stirring every 30 seconds until warm. Arrange sliced beef, edamame, carrot, cucumber, and spinach in serving bowls. Top with shallots and peanuts. Just before serving, drizzle the warmed satay sauce over the beef.
