Savor these speedy minute steaks with broccolini and cannellini beans, ready in just 17 minutes.
Ingredients:
  • 3 bunches broccolini, trimmed
  • 1 fresh long red chilli, finely chopped
  • 2 anchovy fillets, finely chopped
  • 400g can cannellini beans, rinsed, drained
  • 12 (about 50g each) beef minute steaks or sizzle steaks
  • 42.00 gm lemon juice
Instructions:
  • Transfer the broccolini to a heatproof bowl and pour boiling water to cover it. Let it sit for 2 minutes. Then drain the broccolini and immediately refresh it in iced water before draining again.
  • Heat 1 tablespoon of oil in a non-stick frying pan over medium heat. Add chili, garlic, and anchovy and cook for 1 minute until aromatic. Then add broccolini, season, and cook for 3 minutes until tender crisp. Finally, stir in cannellini beans and cook for an additional 1-2 minutes until warmed through. Keep warm.
  • In another non-stick frying pan, heat the remaining 1 tsp of oil over high heat. Season the steaks. Cook 3 steaks, turning, for 1 minute until browned and cooked through. Transfer to a plate. Repeat with the remaining steaks in batches. Remove the pan from heat and let it cool for 1 minute. Deglaze the pan with lemon juice, scraping the bits with a flat-edged wooden spoon for 30 seconds. Transfer to a bowl.
  • Arrange 3 juicy steaks on each plate, generously spoon over the flavorful cannellini bean mixture, and elegantly drizzle with the savory pan juices.
