Turkey steaks with ginger sauce & sweet potato mash

Simplify shopping with this tasty turkey take on steak and mashed potatoes.
Ingredients:
  • 750g sweet potato (kumara), peeled, coarsely chopped
  • 2.50 gm ground cumin
  • 4 turkey breast steaks
  • 3cm-piece fresh ginger, peeled, cut into matchsticks
  • 2 tsp finely grated lemon rind
  • 125ml (1/2 cup) chicken style liquid stock
  • 42.00 gm fresh lemon juice
  • 42.90 gm honey
  • 20.00 gm cold water
  • 2.50 gm cornflour
  • Steamed broccolini, to serve
Instructions:
  • Submerge sweet potato in cold water in a saucepan. Boil over high heat, then simmer for 15 minutes until tender. Drain. Heat the pan, spray with oil, and add cumin. Stir for 30 seconds until fragrant. Mash the sweet potato with a fork in the pan.
  • Heat a non-stick frying pan over medium-high heat and spritz with oil. Cook turkey on each side for 2-3 minutes until fully cooked. Then transfer the turkey to a plate. Lower the heat to medium, spritz the pan again with oil, and add ginger and lemon rind. Stir for 1 minute until fragrant. Pour in stock, lemon juice, and honey. In a bowl, mix water with cornflour and stir into the stock mixture. Bring to a boil, then simmer and stir for 3 minutes until slightly thickened. Add the cooked turkey and heat through for 1 minute before serving.
  • Portion out the mashed potatoes, turkey, and broccolini onto individual plates. Drizzle sauce on top before serving.
